Recipe: Choc Espresso Tart

I used @everybirdcoffee Half Caf espresso for half the caffeine, which is handy if you’re having a slice of this before bedtime 😴

This is also a super simple recipe. I made this in about 20 minutes and it had set in 2 hours. I have our ideal setting time as 4 hours for perfect eating texture.

Crust
1 cup oat flour (blended oats of 1.5 cups)
1 cup coconut flour (blended coconut of 1.75 cups)
1/3 cup coconut oil
1/3 cup rice malt syrup

Filling
1 cup organic cashews (I used @ceresorganics)
1/2 cup espresso (you can use plunger or stovetop)
1/3 cup raw cacao powder
3/4 cup coconut oil
1 tbsp vanilla
1 tap salt
1/2 cup agave syrup

Method
For crust, blend all ingredients until well mixed and sticky.

Press into 24cm tart pan and place in freezer to set.

Filling
In a high speed food processor, add all ingredients and process until smooth.

Pour into base and place in fridge to set (usually 4 hours).
